Watermelon Agua Fresca

Ingredients

Watermelon Base

• 4 cups seedless watermelon, cubed (about 600–650 g)


• 1–2 Tbsp white sugar, to taste (optional, adjust to watermelon sweetness)


• Zest of ½ lime (green part only)

Lime & Mint

•  Pulp of 1 whole lime, seeds removed


• 10–12 fresh mint leaves

To Serve

•  Ice

Directions

  1. Prepare the Lime & Mint
    Add the lime pulp to a pitcher and muddle gently to loosen the fibers and release juice.
    Add the mint leaves and muddle once or twice only, just until aromatic.
    Do not over-muddle — mint turns bitter and dark fast.
  2. Blend the Watermelon
    Add the watermelon cubes and sugar (if using) to a blender.
    Blend until completely smooth.
    Taste and adjust sweetness only if necessary — this should stay clean and light.
  3. Add Lime Zest
    With the blender running on low, add the lime zest and blend briefly, just to incorporate.
    This preserves aroma without extracting bitterness.
  4. Combine
    Pour the blended watermelon into the pitcher with the lime and mint.
    Stir gently to combine — no aggressive mixing.
  5. Serve
    Fill glasses with ice, pour over the watermelon agua fresca, and garnish with fresh mint leaves.
    Serve immediately — mint should not sit in the drink.

*Notes

  • One full lime is intentional — it gives structure without stealing the spotlight.
  • Sugar is corrective, not mandatory. If your watermelon needs it, your watermelon was weak.
  • Lime zest is aroma only. If you taste lime peel, you screwed up.
  • Mint is a flash, not an infusion. Long contact = swamp water.
  • This drink has a shelf life measured in minutes, not hours.
