Ingredients
  

WATERMELON BASE
  • 600-650 g seedless watermelon cubed
  • 1-2 tbsp white sugar optional; adjust to watermelon sweetness
  • 0.5 item lime zest green part only
LIME & MINT
  • 1 item whole lime pulp; seeds removed
  • 10-12 item fresh mint leaves

Method
 

Prepare the Lime Base
  1. Add the lime pulp (with seeds fully removed) to a large pitcher and gently muddle just enough to release juice and loosen the fibers. This step builds structural acidity that balances the natural sweetness of watermelon. Stop early — aggressive muddling creates bitterness and cloudy texture.
Activate the Mint Aroma
  1. Add the fresh mint leaves to the pitcher and press once or twice only. The goal is aromatic release, not extraction. Mint should remain bright green and intact. Overworking it will introduce grassy bitterness and dull the drink’s clean profile.
Blend the Watermelon
  1. Place the cubed watermelon in a blender and process until completely smooth and juicy. Add sugar only if the fruit lacks natural sweetness — start small and adjust gradually. The base should taste refreshing and lightly sweet, never syrupy or heavy.
Incorporate Lime Zest
  1. With the blender running on low speed, add the finely grated lime zest and blend briefly — just a few seconds. This technique distributes citrus oils evenly without shredding the peel or releasing harsh pith bitterness.
Combine and Chill Naturally
  1. Pour the blended watermelon mixture into the pitcher with the lime and mint. Stir gently to integrate. Do not shake or whip air into the drink — agua fresca should remain fluid and clean.
Serve Immediately
  1. Fill glasses generously with ice, pour over the agua fresca, and garnish with fresh mint leaves. Serve right away while bright, cold, and aromatically fresh.

Notes

Watermelon quality defines the drink. Choose ripe, deeply colored fruit with high juice content — pale or underripe watermelon produces flat flavor and weak aroma.
Mint contact time must remain short. Leaving mint submerged too long causes vegetal notes that muddy the drink’s clarity.
Lime zest should be micro-fine and restrained. It exists to lift aroma, not to contribute dominant citrus flavor.
Sugar is optional and corrective. Use only enough to round sharp edges if the watermelon lacks sweetness.
Blending speed matters. Over-blending introduces foam and breaks down texture, reducing the drink’s refreshing character.
Serve immediately after mixing. Fresh watermelon oxidizes quickly and loses brightness within minutes.
