Ingredients

Cucumber–Ginger Infusion Base

• 1 large cucumber, peeled and roughly chopped


• 12–15 g fresh ginger, finely grated

Floral & Balance

•  80–100 ml elderflower syrup, to taste — this one on Amazon


• 40 ml fresh lime juice


• 1–2 Tbsp mild honey, to taste — this one on Amazon


• Pinch of fine sea salt

Mocktail Base

•  360–400 ml chilled club soda — this one on Amazon

To Serve

•  Ice


• Long thin cucumber ribbons


• Edible elderflower blossoms (optional)

Directions

  1. Prepare the Cucumber–Ginger Infusion
    Add the chopped cucumber and grated ginger to a bowl.
    Mash thoroughly with a muddler or wooden spoon until the cucumber releases a lot of juice and the mixture becomes intensely aromatic. Let stand for 5–7 minutes.
    This pause matters — it builds depth and gentle heat. Skip it and the drink tastes hollow.
  2. Strain
    Strain the mixture through a fine-mesh sieve into a pitcher.
    Press lightly to extract juice, but do not force pulp through. Discard the solids.
    The liquid should be clean, pale green, and fresh — not cloudy sludge.
  3. Build the Base
    Add 80 ml elderflower syrup, the fresh lime juice, 1 tablespoon honey, and the pinch of fine sea salt to the pitcher.
    Stir gently and taste adjust carefully, this base should taste slightly too intense — soda will dilute it.
  4. Add the Fizz
    Add plenty of ice to the pitcher.
    Pour in the chilled club soda last and stir gently once or twice. No more. Carbonation is fragile. Abuse it and the drink goes flat.
  5. Serve
    Pour into ice-filled glasses and garnish with long cucumber ribbons and optional edible elderflower blossoms.

*Notes

  • Cucumber must be fresh and crisp. Old cucumber tastes like nothing.
  • Ginger should whisper, not shout. Burning heat means you lost control.
  • Elderflower is aroma and soul, not sweetness — restraint is mandatory.
  • Honey is a controller, not a sweetener. If you taste it, you overshot.
  • Salt should be invisible — it connects floral, citrus, and green notes.
  • Club soda is always added last. Always.
  • Serve immediately for best fizz and aroma.
