Ingredients

Green Tea Base 

• 1.65 L water


• 6–7 green tea bags (Sencha or China Green) — this one on Amazon

Pomelo Infusion

•  1½ cups fresh pomelo segments, membranes removed (about 200 g)

Balance

•  1½–2 Tbsp mild honey, to taste — this one on Amazon

•  Pinch of fine sea salt (about 1/8 tsp)

To Serve

•  Ice

•  Fresh pomelo slices or segments

Directions

  1. Brew the Green Tea
    Heat the water to 75–80°C (167–176°F), do not boil. Add the green tea bags and steep for 2–3 minutes maximum. Remove the tea bags without squeezing and let the tea cool to lukewarm.
  2. Infuse the Pomelo
    Add the pomelo segments to the warm tea. Let infuse for 10–12 minutes only, just until a clean citrus depth develops. Do not extend — pomelo turns bitter and flat if overextracted.
  3. Strain
    Strain the tea through a fine-mesh sieve into a clean pitcher. Do not press the fruit. Discard the solids. The liquid should be clear, lightly aromatic, and dry.
  4. Sweeten and Balance
    While the tea is still warm, stir in 1½ tablespoons of honey until fully dissolved. Add the pinch of fine sea salt and stir to dissolve. Taste and add up to ½ tablespoon more honey only if needed. The drink should stay crisp and restrained, not sweet.
  5. Chill
    Refrigerate for 1–2 hours until fully cold and integrated.
  6. Serve
    Fill glasses with ice, pour over the chilled pomelo green iced tea, and garnish with fresh pomelo slices or segments.

*Notes

  • Use fully ripe pomelo. Underripe fruit tastes bitter and hollow.
  • Remove all membranes — they are pure bitterness.
  • Salt should be invisible. If you taste it, you failed.
  • Honey should round, not dominate.
  • Green tea must stay soft and clean — boiling water ruins it.
  • Best enjoyed within 24 hours for clarity.
